Umami and the Truth about MSG

Last Friday, hubby and I discovered a new knowledge and a tastier way to health.  Have you heard about "Umami" , if you happen to be a fan of Chef Rosebud Quickfire at QTV Channel you might definitely heard her talking about Umami in almost all of her episode but still funny and silly it's only last friday that I have learned that "Umami" is actually our fifth taste.  Umami is the taste which is really hard to describe but you know that your feeling it.  It is actually the delicious feeling that is savory in taste. 

The four basic taste we had our sweet, sour, bitter and salty but then if you had a taste of something that is not within that four basic taste then you might be feeling the Umami taste.  "Umami" is also called savoriness, it's derived from the japanese word good flavor or good taste and it can be found in savory products such as meat, cheese , mushroom and protein heavy foods. Salts of glutamic acid also known as glutamates blend within and that's why it was used as a flavor enhancer.  

In 1985, Kikunae Ikeda as japanese inventor created monosodium glutamate, he discovered how to make food more delicious which improved the standard of living of japanese people. 

MSG or Monosodium glutamate is a crystallized form of natural glutamate just as table salt is a form of sodium and sugar is a form of sucrose.  Glutamate is extracted from natural food crops of sugar cane or tapioca.  MSG or we commonly known as vetsin (Ajinomoto) provided the Umami taste. 

To date, there are many Umami restaurants around the world and the top 10 are;  

The Fat Duck, London
The French Laudry, California
Kikunoi, Kyoto
Momofuku Ssam Bar, New York
Nobu, London and New York
Kyoto Kitchno, Kyoto
L'Astrance, Paris
AME, San Francisco
Mirazur , Nice
Tsukiji Tamura, Tokyo

But then we have the common misconception about MSG or vetsin.  Many of us thoughts that MSG can cause cancer, it can cause allergy and sometimes high blood pressures. But we  don't know that all these misconceptions are really just misconceptions but the truth, MSG is safe and widely studied that can give many benefits in our body and health. 

So, will I use MSG now? Of course I will.  As a mother, I want the best for my family and giving them nutritious foods are one of my priority but then let us still remember the word "moderation", too much of everything is still bad for our health.  Be healthy, live well, eat well and enjoy your Journey to life.
